Featured Wine: Duval–Leroy brut rosé NV

At The Metropolitan Club this month, manager Stephen Zeneski has picked the perfect wine to share with someone special on Valentine’s Day. Make a toast to love and drink this pink champagne with the Half Dozen Oysters from The Met’s appetizer menu or enjoy it after dinner with something sweet from the dessert menu.

The Duval-Leroy vineyard is nestled in the small village of Vertus in the heart of the Cotes des Blancs in France. Duval-Leroy is one of the few champagne houses using the saignée method, which is the traditional way of making rosé and requires top-quality grapes. The maceration lasts 24 to 48 hours with alcoholic fermentation in stainless steel vats at temperatures between 16° and 20°C. Malolactic fermentation is also done.
